Let's be real about June. While technically summer doesn't start until the 21st of this month, when the calendar rolls into June it's officially summer. When we think of summer, we think of sunshine and the beach and the good-vibes-breeze and, when it comes to the ocean, we think of High Tide. The twice-a-day moments when the water rushes quickly up the sands and it's a wonderful balance of beauty and intensity. For us, it's the primo sensory summer experience.Thus, we introduce for the 3rd straight summer High Tide, Summit's seasonal blend that's designed in name and in taste to make you think of the very season we're in. Summer is fun, summer is joyful, with late twilight nights and block parties and kids biking up and down the street. Summer is about being outside, and living life a little bit slower than the other 9 months. It's about making the choice to walk to your morning coffee, sitting at the cafe for an extra handful of minutes, about drinking High Tide.We approach seasonal blends at Summit to offer our guests something delicious, surprising, fun, and of the season. The coffee team stands around the cupping table and tastes a bunch of components on their own, and then we discuss how to turn these single coffees into a harmonious blend that drinks like how we intend the seasonal blend to drink.With High Tide, we're taking these summer vibes and turning it into a deliciously sweet cup of coffee. We blended two different Ethiopian coffees - a washed processed from the Koke cooperative, and a natural processed from Guji -- as 80% of High Tide, since fresh harvest Ethiopian coffees are fruit-forward and bright. Then we balanced this with 20% of Rutas del Inca, from Peru, to give it a rounder mouthfeel. Blended together, we think High Tide is a bright coffee that tastes tropical with notes of peach.
