The coffee: This beautiful coffee comes to us from Summit’s second partnership established at the Colombia Best Cup, when Evan cupped the country’s best coffees and brought home two of the top 15. We’ve enjoyed Eider Herrera’s coffee so much, and can’t wait to share Finca La Toma, named for producer Fernando Zemanate Bambague’s farm in Cauca.

Fernando owns the 2-hectare farm in Cauca’s Popayancito neighborhood, where he grows 5,000 Colombia variety trees. After harvesting and depulping, the coffee is fermented dry for 24 hours before being washed and then dried in the sun for 13 days.

We find that Summit is perhaps best at roasting washed coffees from Colombia, and Evan has profiled this crop to a light-medium roast. The result is rich with caramel, orange, grapefruit, raisin and chocolate flavors. It is sweet with big tart acidity and a smooth mouthfeel.
