Sustainability, in regards to coffee, is an umbrella term for organic farming, shade growing, fair trading and other practices that concern themselves with the allocation and consumption of resources.
The idea is to build and operate the coffee industry in a way that has longevity. This means applying practices that conserve things like soil, waterways, and workers instead of methods that tend to overuse or abuse these resources for maximum short-term gains.
