French pressing your coffee is sort of like owning a manual 35mm SLR camera; it's total control. You heat the water to the right temperature (195-205 degrees) and control the brew time so that, with a little practice, you get coffee that is customized to your palette.

Here's how to do it:

Step 1. Boil some good tasting water. The amount is determined by the size of press you own.
Step 2. Measure the whole bean coffee into your grinder. Start with 2 tablespoons per 8 ounces of water. (Remember that the quantity of coffee and fineness of grind are variables that are to be adjusted to your taste.)
Step 3. Grind the coffee. I recommend a burr grinder here because evenness of grind is important. A good starting place is to set the grinder half way between auto drip and coarse.
Step 4. Start the brew. Place ground coffee in the french press, pour the water (just off boil) over the grounds, stir a few times and put the lid on with the plunger in the up position.
Step 5. Stir the brew. After the coffee has steeped 1 minute, take the lid off and give the brew another stir or two to submerge the floating grounds.
Step 6. Press the grounds. After another 3 minutes (total of 4 minutes) press the plunger down forcing the grounds to the bottom of the press. There should be a fair amount of resistance.
Step 7. Serve the coffee. Expect to experience a strong brew with a little sediment in the bottom of your cup. This is normal; drinking that last sip is not. French pressed coffee is to be consumed right after brewing. Don't try to keep some for later.

Troubleshooting:
The coffee is too strong. Try using less coffee. Remember, french press is not going to taste like coffee made in a drip coffeemaker.
The coffee is bitter. Two factors produce bitter coffee: 1) The water was too hot when it touched the grounds. Let it cool 30 seconds after boiling before pouring over coffee. 2) The coffee steeped too long. Decrease steeping time.
The coffee has a lot of sediment. Some sediment is normal. If it is excessive or your filter screen gets clogged then set your grinder setting more coarse.
